Cleaning a high-quality knife is not just a matter of hygiene; it's an act of preservation. Poor maintenance can turn an exceptional blade into an oxidized and dull tool in just a few weeks.
1. The Arch-Nemesis: The Dishwasher
This is the point of no return for artisanal cutlery. Here's why you absolutely must avoid it:
- Chemical Corrosion: Dishwasher tablets are extremely aggressive. They attack steel (even stainless steel) and cause rust spots.
- Thermal Shock: Intense heat cycles cause the steel to expand and contract, which can weaken the edge and loosen the handle rivets.
- Mechanical Damage: Powerful water jets cause knives to move around and hit the basket or other utensils, destroying the blade's edge.
- Wood Destruction: If your handle is made of wood, the dishwasher will cause it to swell, crack, and then rot.
2. The Golden Rule: Hand - Soap - Drying
The professional method is simple and quick:
- Immediate Washing: Never leave your knives soaking in the sink. Acidic residues (lemon, tomato, onion) will attack the steel if left in prolonged contact.
- Lukewarm Water and Mild Soap: Use a non-abrasive sponge (soft side) to avoid scratching the blade's polish or Damascus pattern.
- Instant Drying: This is the most important step. Wipe your knife with a dry cloth immediately after washing. Stagnant moisture is the main cause of oxidation, even on so-called "stainless" steels.

- The Patina: These blades will naturally change color and gray over time, which is normal.
- Oiling: If you don't use your knife for a few days, apply a drop of neutral oil (rapeseed or special camellia oil) to the blade to create a protective barrier against airborne moisture.
